Step 1: Mix the dough.
Pour a little warm water into a small pot, add 1 g baking soda to melt, then beat in three eggs and break them up quickly with chopsticks.
Prepare 200 grams of ordinary flour, pour in the egg liquid, stir it into flour wadding first, and then knead it into smooth dough. 200 grams of flour and 3 eggs are just right, and the amount of warm water only needs to melt baking soda, which is almost negligible. After kneading, cover the dough with a pot cover for 15 minutes, so that the gluten can relax and it is convenient for later setting.
Step 2: Cut strips.
After the dough is baked, take it out, roll it into a round dough sheet with the thickness of 1 cm with a rolling pin, then roll it into a block with a rolling pin and cut it into wide strips of about 5 cm.
Sprinkle a layer of flour on it, fold the wide strips to avoid sticking together, and then cut them into narrow strips of about 1 cm.

When the oil in the pot is heated to 50%, the cut narrow strips are sprinkled into the pot in turn, and the chopsticks are kept rotating during frying. Noodles will slowly change color, float on the oil surface, fry until they are slightly yellow and crisp, and then they can be taken out to control the oil.
Step 4: Boil the sugar.
Boil 80 grams of water in a pot, add 80 grams of white sugar after the water is boiled, turn on a small fire and heat slowly to melt the white sugar, then pour in 150 grams of honey, stir constantly with a spatula, and boil the white sugar and honey into sticky bubbles.
Step 5: Wrap sugar.
Then take a pan and pour the syrup on the freshly fried noodles. Turn it with a spatula when pouring, so that the noodles are evenly coated with syrup. Sprinkle a little black sesame, raisins or nuts and mix well.
Step 6: Compaction and cooling
Pour the mixed noodles into a grinder prepared in advance and compact them, then put a layer of raisins on them to cool. I used a fresh-keeping box, and I pressed it a few times with my hand, which was very firm.
After cooling, cut into small pieces and serve on a plate. It is safer and more secure to make it yourself than to buy it yourself. You can make a little more at a time, wrap it in plastic wrap and enjoy it at any time.
Tip: 1. After the dough is mixed, simmer for a while, and the gluten should be relaxed to facilitate molding;
2. The syrup can be boiled more. Try to wrap the noodles in syrup, which is not easy to loosen, and will not stick together when poured in hot.
3. After the syrup is wrapped, it must be pressed as hard as possible, and it is not easy to spread when cutting.
