How to skin a rabbit

It is advisable to slaughter rabbits when they are about 1 year old. At this time, the rabbits are mature and the quality of the rabbit skin is the best. When slaughtering, the rabbit can be knocked unconscious with a stick or fist, and then bled and skinned.

(1) Fresh skin shaping: The barrel peeling method is generally used to peel rabbit skin, and the peeled skin plate is cylindrical. During plastic surgery, use scissors to cut open the midline of the rabbit's abdomen, and then use a knife to cut off the front and rear limbs, scalp, tail, etc. Scrape off the remaining meat and fat from the skin with a blunt spatula.

(2) Anti-corrosion: The peeled fresh skin (blood skin) is extremely susceptible to microbial infection, and anti-corrosion measures should be taken in time during high-temperature seasons to avoid corruption. There are two commonly used antiseptic methods in rural areas: ① drying method: the dry skin made by this method is called "sweet dry skin" or "light dry skin". When drying, press the fresh skin into its natural skin shape, with the fur facing down and the skin board facing up. During the drying process, be careful not to get exposed to rain; do not expose it to the scorching sun or place it on a heated stone or cement board in summer. Take strict precautions against freezing and frost in winter. When drying, choose sunny and warm weather. This drying method is simple, low cost and clean. ② Salting method: The principle is that salt can create a hypertonic environment, remove moisture from the skin, and inhibit the growth and reproduction of various microorganisms, thereby achieving the purpose of antisepsis. The method is: use 40% pure dry fine salt of the weight of the fresh leather to evenly sprinkle it on the surface of the fresh leather, marinate it for 8 days and then dry it in the sun. The pickled and dried rabbit skin has strong antiseptic power and is easy to transport and store. It should not be damaged by moths during storage.
