Method for making crispy pineapple buns
Get the materials ready. Mix high flour and low flour separately, add sugar, salt, egg liquid and yeast in turn, and soften the butter for later use.
Circle, press and knead until the dough is like, that is, the kneading stage (it can be kneaded, the dry powder disappears and the dough is caked), then add butter and knead until the swelling stage (smooth and elastic with bubbles). Kneading is divided into three steps: 1, kneading into dough, 2, crushing, 3, crushing. Pay attention to skills. The faster you stir, the more water you absorb!
The temperature is 27 degrees, the humidity is 80%, and the fermentation is 2~2.5 times (pay attention to the plastic wrap). After testing the degree of fermentation, insert the finger stained with dry powder into the bottom of the dough and pull it out. The bottom of the hole rebounds slightly, keeping the cone motionless, and the fermentation is completed.
Divide the dough into 55g pieces, knead and relax for15 ~ 20min (pay attention to the plastic wrap, the temperature and humidity are the same as when fermenting), and the temperature after the second round is about 38 degrees, and the humidity is 70%, and the second round is about one hour.
To make cakes, first mix butter and sugar evenly, then add egg mixture several times and mix well, then add milk powder and low flour and mix well, and put it in the refrigerator for later use. After the second fermentation, take a proper amount of cakes (1 1g) and roll them thin with a rolling pin, and finally cover them on the fermented dough.
Preheat the oven 180℃ and bake it 15~ 18 minutes, depending on the oven. Take the net out of the oven at once. When the pineapple skin becomes hard, you can cut it and slice it with butter.
Crispy and delicious, cold and hot. I made a small one for my baby. I like it.
