I have lived in Qiandongnan from Hubei for more than seven years. I want to share with you some strange dishes I have seen and eaten. These dishes are regarded as absolutely delicious in the local area, but some are afraid to stretch with chopsticks, and some are addictive.
1, boiled tadpoles in sour soup
Not many people eat this dish, but many people in Qiandongnan have heard of it. After the tadpoles are picked up, they are put in clean water for several days. After the mud of tadpoles is spit out, the sour soup is boiled, and the live tadpoles are directly poured into the sour soup and cooked. Someone around me has eaten it and said it was delicious. When I first came, I thought it was a whip of cattle and sheep at first, so I dared not eat it. Later, I went to Zhaoxing Dong Village in Liping to eat once, and it felt quite fragrant. The cattle in Rongjiang are very flat and authentic.

Here, cold salad and eating powder are essential condiments, and they are also made separately. It is common to fry bacon with broken ears. When foreigners eat this, they always feel a fishy smell spread all over their bodies from their mouths. I have been here for so many years that I can't get used to it.
6. Sour soup
There is a saying here in southeastern Guizhou: don't eat sour for three days, take a walk. Sour soup can be divided into white acid and red acid, the more common one is red acid, and sour soup is also listed as the geographical symbol of Qiandongnan Prefecture. The first time I eat white acid, I feel no different from the swill that I feed pigs in my hometown. Later, I ate red acid and felt the taste was quite unique. The most unique feature of red acid is the small tomato here, which tastes more sour and fragrant in the wild. Sour soup can do anything, and almost everyone here can do it.
Of course, there are many others, such as half a catty of white meat, eating fish without scaling and cutting the belly. It's not wonderful to say, but the eating habits are different, and only you can't think of it. Welcome to Guizhou to taste.

2. Pickled fish and bacon
Marinate pork belly with good fish and fat, and then mix glutinous rice, Chili powder and pepper. Fish with pickled vegetables is stuffed into the belly of the fish, and bacon is evenly spread on the surface of the fish. Specially pickled fish and pork belly will have a sweet and sour taste and a strong fragrance. There are many ways to eat, such as frying and burning, and bacon can also be fried with vegetables such as broken ears, which tastes excellent.
3. Dong Jia cooks fish
In Rongjiang County, Guizhou Province, the ancestors of local villagers had the custom of raising fish in rice fields. Every year in the harvest season, the local villagers in Dongzhai Village begin to collect fish in the fields. As the saying goes, it is a traditional custom of Dong people to eat grilled fish instead of fish. Dong grilled fish has always been famous for its freshness, tenderness, fragrance and beauty, and its eating method is novel and unique. Its preparation method is to remove gallbladder, then slowly cook, slowly roast, and slowly roast until the fish is brown and dripping with oil, then remove internal organs, add salt, pepper, ginger, garlic, temporarily collected wild vegetable spices, leeks, Mao Mao cuisine and other local original wild vegetables, and mix well.
4. Cold-blooded curd

In my hometown, the local houttuynia cordata is as essential in cooking as coriander. I still remember when I was in Guiyang, I got up at 5 o'clock every day and pushed the cake truck to the gate of Guizhou University to buy cakes. Although the business was not successful, it was an unforgettable memory. The most unforgettable food is Huaxi beef powder in a street. I can't remember which street it is, but I'm sure I can find it when I go back. A bowl of beef 10 yuan. There are many people waiting in line every time I go. Now that I think about it, I really miss that smell. Later, I went to Beijing and Shanghai, and I didn't find the same taste. I don't know.
Walking from Anshunchang to the mountains in the southwest, there is a county town near Guangxi called Anlong. In the 1990s, I have been to Anlong County many times, but from Anshun to Anlong, I have to climb several mountains, one of which is called Huajiangpo. Huajiangpo is famous for dog meat hotpot. Huajiangpo is a small village on the mountain with few residents. Spread out along the Panshan Highway, most of them feed on dog meat.
Every winter, people from Solstice, Anshun or Guiyang will go to Huajiangpo to eat dog meat as the beginning of winter. I don't know from which dynasty, people there dreamed of a warm winter, and needed to find a kind of food that could resist the soaking of mountain wind, make the human body hot and dry, and make the blood flow happily, so the dog was targeted! Because there is no more qualified choice. This is the misfortune of dogs, this is the expectation of human ancestors, and no one can blame it!
Most dog meat shops in Huajiangpo don't do the business of killing and buying now, so there are fewer bloody scenes that attract attention. The mountain breeze is Xu Lai, and the grass grows on the slope.

In those years, I often passed by Huajiangpo and ate very little, for nothing but shyness! Later, I had spare money in my pocket and never passed Huajiang again. I saw Huajiang dog meat chain in Shijiazhuang the year before last, and I was deeply impressed by Huajiang Mountain Wild. Without flowers, mountains and rivers and compositae weeds, it would be tasteless.
