4. When the water temperature rises to 5 degrees, the white and yellow film around the esophagus of the pig's stomach will change color. At this time, gently enclose it with a spatula. 5. If the water temperature is appropriate, the white film can be easily torn off by hand after being picked up.
6. After tearing off the white film, continue to remove the residual mucus on the surface of the pork belly with a knife.
7. Rinse the enclosed residue with clear water.
