3. The kneading surface must be measured with a thermometer. The temperature should not exceed 28 degrees, and it is best to keep it at 26 degrees.
4. It is very important to make a glove film on toast. At worst, you should lick the hole without sawtooth. This brings us to the dough temperature. The temperature of dough is low, the speed of filming is fast, and the temperature of dough is high, so it is difficult to film. So the dough temperature is also very important.
5. Fermentation: The fermentation temperature must be fermented according to the temperature written in the remarks below my article. The fermentation temperature should not be too high. Toast that is too hot is rough and may have a sour taste.
