Tea includes leaves and buds of tea trees. Green tea is made from the new leaves or buds of tea trees without fermentation, through the processes of enzyme fixation, shaping and drying. It retains the natural substances of fresh leaves, and green and tea soup preserve the green style of new tea, hence the name.

Green tea is produced in many places in China, including Henan, Guizhou, Jiangxi, Anhui, Zhejiang, Jiangsu, Sichuan, Shaanxi, Hunan, Hubei, Guangxi and Fujian.

The terrain is mainly hilly, and the drainage conditions are good. Abundant precipitation, small annual temperature difference, large temperature difference between day and night, long frost-free period and good lighting conditions are suitable for the growth of various types of tea trees, especially for the growth of big-leaf tea trees.

There is more sunshine in Zhixia in late winter and foggy in summer and autumn (Yunnan tea area). Sunshine is rarely beneficial to the overwintering and nutrient accumulation of tea trees, and is beneficial to the improvement of tea quality in summer and autumn. Latosol, lateritic red soil, mountain red soil or mountain yellow soil, brown forest soil, these soils have deep development and good structure, which are suitable for tea tree growth.
