Three-flowered toe (also known as toe meat and three-flowered tendon)
The meat is crisp and the juice is sweet and fresh. This piece of meat is located in the upper arm, called the front leg tendon, inside the scapula, with thick tendons passing through it. In western food, this piece is called the top edge or front leg.
Slicing needs to be cut with tendons, and the requirements for knife work are also very high. The texture of the slice is like leaves.
6. Five flower toes (also known as normal five flower and five flower tendons)
It is the part of the hind leg corresponding to the triple tendon, but it is even rarer. There are more tendons than three flowers, the lines are more obvious and the taste is more crisp. If you like the feeling of elastic teeth, you will find this part tastes better. The picture below shows the comparison between five toes and three toes.
Wuhuajin is two small calf tendons on the inner side of the thigh of the hind leg, which is also the part of the hind leg in western food.
