Whole wheat oatmeal bread
Ingredients details: whole wheat flour 1/2 1/4 cup bread machine yeast 1/2 tsp high-efficiency active yeast 1/4 cup 1TBL fine sugar 1 TBL Milk powder 1 TBL Salt 1/4 tsp Unsalted butter 15 grams Protein 1 TBL Appropriate amount of oatmeal
Preparation steps
1. 1. Rising dough 1. First heat the water until it feels warm to the touch , add yeast, mix evenly, then add flour, stir with a mixer at slow speed until it forms a ball, put it into a container, cover with film, and ferment for 2 hours in a warm environment;
2. Mix all the fermented dough from step (1) with ingredients B, and then mix at medium speed to form a more stretchable dough;
3. Add unsalted butter and continue mixing at medium speed until it becomes stretchy. The dough can be pulled out of the dough.
4. Place the dough into a container, cover with plastic wrap, and ferment for the second time in a warm environment for 50 minutes.
5. After fermentation, divide the dough into 3 equal parts (this time it is a small test), roll it into a round shape, cover it with plastic wrap and let it rest for 10 minutes.
2. 2. Shaping: Press the small dough slightly to deflate it, then roll it into a round shape.
3. Roll into oval shape.
4. Fold the dough from one side into a roll shape.
5. Close the mouth tightly.
6. Roll the dough on the chopping board a few times.
7. Brush with egg white and roll it on the oatmeal plate so that the whole dough is covered with oatmeal.
8. Cover with film and perform final fermentation for 25 minutes.
9. Use scissors to cut three cuts evenly on the surface of the dough at a 45° angle (as shown in the picture).
10. Baking: 1. Place a pot on the lower shelf of the oven and put about a cup of water. 2. Place the dough into the middle rack of a well-heated oven at 300F for about 20 minutes.
11. The finished product picture, the internal structure is also quite soft.
