The method of making Dai grilled fish is to scale the live fish, cut it open from the back, take out the internal organs, stuff the fish belly with seasonings such as refined salt, dried peppers and pickled vegetable roots, then clip the fish together with two pieces of bamboo and roast it on the fire. Baked until the fish is buttery.
The grilled fish is tender and refreshing. During festivals, weddings and entertaining guests, Dai people always cook grilled fish to entertain relatives and friends.
