Where does Dai's grilled fish belong?
Dai people in Xishuangbanna live by the beautiful Lancang River. They are good at cooking as well as fishing. There are many ways for local Dai people to cook fish. Besides pickled fish and hot and sour fish, the most unique one is grilled fish.

The method of making Dai grilled fish is to scale the live fish, cut it open from the back, take out the internal organs, stuff the fish belly with seasonings such as refined salt, dried peppers and pickled vegetable roots, then clip the fish together with two pieces of bamboo and roast it on the fire. Baked until the fish is buttery.

The grilled fish is tender and refreshing. During festivals, weddings and entertaining guests, Dai people always cook grilled fish to entertain relatives and friends.
