Precautions for canning:
Grapes need to be crushed before canning, which is beneficial to make the grape juice contact with the grape skin more fully and make the natural yeast on the grape skin propagate and start fermentation quickly.
When canning, the poured grape pulp shall not exceed 4/5 of the volume of the fermentation container, and a fermentation tube shall be installed. Homemade wine will produce a lot of carbon dioxide during fermentation. The installation of fermentation tube is beneficial to eliminate the generated gas. If you pour too much fruit pulp without installing a fermentor, it will easily lead to the container bursting and bring unnecessary losses.
Precautions for adding sugar:
The amount of sugar added is mainly calculated according to the alcohol content of the wine that the brewing friends finally want to brew and the sugar content of the selected wine grapes. Usually, according to 17g sugar/liter, 1 degree alcohol can be produced. Without sugar, the highest alcohol content of homemade red wine is 15 degrees. Brewers can decide how much sugar to add according to their own needs.
In addition, it should be noted that if there is too little sugar in the process of adding sugar, the alcohol content of the final wine will be very low, and too much sugar will easily lead to incomplete fermentation and sweet wine. Of course, alcohol can also be added to increase the alcohol content of the finished wine.
