Huaiyuan Sanjue refers to frozen cakes, Ye Er dam and tofu curtain produced in huaiyuan town, chongzhou city, Sichuan. It is a very famous traditional snack in Sichuan Province. Because of geology and water quality, it is impossible for the same chef to do these three things in the same way in other places.
Huaiyuan three must be divided into old and new. The three unique things of Huaiyuan passed down from history are frozen cakes, two brushes of leaves and three cannons. Later, because the eating habits of the Third Artillery gradually faded out of people's sight, there would be no such third trick. Later, due to the influence of eating habits, tofu curtain gradually replaced the position of the three guns in the three wonders, thus forming a new pattern of Huaiyuan.
Frozen cakes were created by chefs in huaiyuan town during the Republic of China, named Jiang Frozen Cake. Its production process is unique. First, the rice is soaked and ground into slurry, then the boiled glutinous rice is steamed, then the two are put into a jar for fermentation, and finally lard and sugar are added. The finished product is loose and slagged, oily but not greasy, sweet and slightly sour.

In the 1920s, an old man named Huaiyuan created this kind of paper, which was then called wild cotton paper, commonly known as Momo. Rice, glutinous rice and appropriate amount of peas are mixed and ground, containing pork stuffing. The finished product is as clean as milk, moist and refreshing, oily but not greasy, and has the characteristics of not touching vegetables, chopsticks and teeth, so it is also called air ball Ye Er Ba. Because its finished product is wrapped with orange leaves, it is named "Ye Er Ba", which combines the fragrance of glutinous rice and orange leaves.
Huaiyuan town alone has a history of more than 500 years. First, make edible soybean milk from high-quality soybeans, then add appropriate amount of salt water to thicken it, and then stir it evenly with a brush. Then, soak the gauze, put it in a wooden box, lay a layer of fine cloth and tofu brain, filter it dry and make it into the shape of a curtain. The biggest feature of curtains is that they must be eaten with moldy long white hair. It is slightly astringent when eaten raw, can be roasted and fried, and has a special taste.
