pomegranate wine

Pomegranate wine is a fruit wine made from pomegranate through crushing, fermentation, separation and aging.

Production method: 1. Fresh, mildew-free, large, thin-skinned, sweet and green pomegranate is the best raw material for brewing. The juice yield is about 30 ~ 40%.

2. Pomegranate is sorted, peeled and then ground into meat.

3. The amount of fruit pulp entering the pool is not allowed to exceed 80% of the pool volume, and then it is fermented before entering the pool.

4. Add a certain amount of sugar and sulfur dioxide before fermentation. Then, in order to ferment vigorously, 5-8% strong artificially cultured yeast is added for fermentation.

5. Pre-fermentation temperature is 25 ~ 30℃, fermentation time is 8 ~ 10 days, and then separation is carried out.

6. Add appropriate amount of white sugar to the separated skin dregs for secondary fermentation, and distill to obtain pomegranate brandy, which will be used when blending wine.

7. When the sugar content of the separated raw wine is below 0.5%, it enters the post-fermentation storage period (the liquid level is sealed with alcohol).

8. After storage for 1 year, filter, detect sugar, wine and acid, and pass the blending.
