Mongolians call milk, drinks and food "free food". Milk tofu and milk skin belong to food. Milk tofu is made from cow and goat milk by coagulation and fermentation, and it tastes sweet and sour. Cows, sheep or camel milk are simmered. When milk is cooled, the surface will condense into a layer of fat skin, which is called milk skin. Milk foods include white milk tofu, yogurt, cheese, crisp milk, cream, milk residue and so on. And milk drinks include fresh milk, sour horse milk, milk wine and so on. The main sources of Mongolian dairy products are milk, goat's milk and camel milk, while mare's milk can only brew yogurt or milk wine. Sour mare's milk has a certain effect on gastrointestinal diseases and lung diseases, and mare's milk also has a certain effect on rheumatism. People sometimes add brown sugar and wild fruit juice to dairy products, which tastes sweet and sour and has high nutritional value. Whenever there are holidays, or banquets, weddings, sacrifices and other important occasions, the host will take out milk tofu, milk skin, horse milk and other foods to entertain guests. Free food is rich in protein, which is also a necessary diet for herders to go out.
Red food mainly refers to beef and mutton, and horses are rare, because horses are good partners of herders and are noble. Mongolian red food is generally hand-grabbed meat, roasted mutton, stewed beef, hot pot and so on. And the banquet was full of sheep mats. Among them, grasping meat means not adding salt and other condiments to keep the original flavor of meat. You can eat it by hand after cooking, and bring your own flesh and blood.
