Volatilization: With the extension of storage time, low-boiling substances such as sulfide contained in liquor fermentation will naturally volatilize, reducing the irritation of liquor entrance.
Association: The activity of ethanol molecules will decrease with the passage of time, and the molecules of wine will be associated with each other and rearranged, making the taste soft.
Chemical changes: some molecules of new wine are unstable, and some chemical reactions occur in the body during storage, resulting in new esters, which makes liquor more fragrant.
These changes promote the aging of liquor body, which makes the liquor taste more mellow and the aroma more comfortable, so it is very important to ensure the ideal storage conditions of liquor, especially for investment. Next, we will introduce how to establish an ideal wine storage condition.
First, the container:
Generally speaking, clay pots are more suitable for storing wine. Pottery containers have good air permeability and rapid oxidation, esterification and reaction. The jar contains a variety of trace elements, which can promote the molecular combination of wine, make the wine contain more and richer trace elements, and automatically generate original ecological oxygen, thus promoting the oxidation and aging of beneficial substances in wine. If the daily bottled liquor needs to be stored for a long time, it can be stored with wax sealing method or plastic wrap and raw material tape to seal the bottle mouth for a long time, but attention should be paid to maintaining the integrity of the bottle packaging.
Second, the temperature:
The environmental temperature of liquor storage should not exceed 30℃, and the ideal storage temperature is about 15-20℃, which can better promote liquor aging. When the temperature is high, alcohol volatilizes, which is prone to high alcohol? Run? ; When the temperature is too low, the molecular activity of wine body decreases, which is not conducive to physical and chemical changes. At the same time, in order to prevent the temperature difference from changing too much, maintaining a constant temperature is very important for the storage of alcohol.
Third, humidity:
The ideal humidity condition for liquor storage is about 70% relative humidity. Too humid environment will not only block the micropores on the pottery altar, but even make water seep back into the altar. If it is bottled wine, it will make the wine label damp, moldy and moth-eaten, which will seriously affect the appearance of wine. Of course, it should not be too dry, especially in the north. Often open the window for ventilation, which will easily lead to the plastic film bursting in a short time. It is suggested to put some containers in the place where wine is stored to increase humidity.
Fourth, the light:
Liquor storage, like wine, needs to avoid direct sunlight, so to store in a cool place, it is best to design the wine cellar underground with cellar storage capacity. In strong sunlight, ultraviolet rays will kill the effective components in wine, making it impossible to continue fermentation. The high temperature produced by direct sunlight will also destroy the wine molecules in the bottle, aggravate the chemical reaction of liquor, and even deteriorate and taste.
V. Ventilation:
A small amount of air should be allowed to circulate in the storage space of liquor, so as to avoid rancid smell in the storage space, which will be very unfavorable to the taste of liquor. If there is a wine cellar, you can install an exhaust fan in it. At the same time, the strong pungent smell will also affect the quality of wine, so keep away from paints, mothballs, perfumes, cosmetics, chemicals, foods with pungent smell and anything that emits pungent smell.
Sixth, stability:
Ensure that the place where liquor is stored will not move or shake frequently. Frequent vibration will make the molecular movement of wine more active, which is not conducive to natural aging. If the wine cellar is located near railway tracks or noisy roads, the wine must be placed away from the ground or walls to minimize the vibration frequency. At the same time, at home, avoid washing machines, refrigerators, air conditioners and other electrical appliances.
