1. All the materials are ready, including flour, peanut oil, sugar, white sesame seeds and maltose. The flour used here is medium gluten flour, which is the flour we usually use to steam steamed buns for jiaozi.

2. Pour all the materials in the water-oil skin, including flour 35g, peanut oil 7g and water 17g, into a basin and knead into dough.

3. Pour flour 175g, peanut oil 18g, water 43g, maltose 75g and baking powder 1g into the basin.

4. Knead all the materials into dough, which does not need to be particularly smooth. Knead dough is the same as water-oil crust, and let it stand aside for proofing 15 minutes.

5. It's time to sober up. Let's boil the syrup. This syrup is used to make three knives. This is the top "honey". Pour the maltose, sugar and water in the syrup into the pot.

6. Put it on the stove and heat it. The sugar begins to melt slowly. Finally, turn off the fire when it is boiled to a big bubble.

7. After the dough is proofed, we roll the water-oil crust into a thin cake crust, preferably a rectangle.

8. Roll the dough into an oil skin with a thickness of about 0.5 cm. Not too thick. If it's too thick, it won't be fried thoroughly, and the surface is not ripe yet, so we'll roll it thinner, which will swell up when frying.

9. Brush a layer of water on the rolled oil skin, and then put the dough on it so that the two dough skins can be better bonded together.

10. Sprinkle some white sesame seeds and roll them with a rolling pin. Sesame will drop when fried. When kneading dough, you can put them in the dough, so that sesame seeds will be in the dough, not on the flour, and will not fall off when frying.
