Later, according to the changes in the market, hand-fried flat tea was called flag gun, similar to West Lake Longjing. Now, due to the increase in the area of tea mountain and the increase in tea sales, it is too late to stir-fry tea by hand, and it is all produced and semi-automatic tea machine. The same production process is also used for Wuyun tea in Anding Mountain.
There are tea frying machines and pot frying machines, and the main steps are as follows:
1. Spread the fresh leaves of Wuyun tea: spread the collected fresh leaves thinly indoors, so that part of the water volatilizes, giving off grass fragrance, increasing tea fragrance, reducing bitterness and improving freshness, and making the fried Wuyun tea smooth in appearance and green in color;
2. Tea deactivation (also called green pot): the process of deactivation and initial formation;
3. Rejuvenation of tea leaves: after deactivation, put it in a cool place for dewatering and rejuvenation. After cooling, sift the tea powder and remove impurities;
4. Steaming tea pot: pour the tea leaves after moisture regain into the pot, further shape and fry, and complete the shaping. Usually four pots of green leaves are combined into one pot;
5. Tea sieving: sieve tea with a sieve. Remove the powder from the yellow tablets, and sieve the tea powder to make the finished product uniform in size.
