Prepare ingredients
1: Two bags of bean paste (sold in supermarkets),
2: 4 eggs (about one egg makes three snow sponge bean paste),
3: a catty of soybean oil,
4: 50 grams of corn starch and 5: 50 grams of sugar.
Prepare tools
1: spoon for eating,
2: Egg beater.
Open the egg, separate the yolk from the egg white, take the egg white part and remove the yolk (this dish doesn't need the yolk, so it must be completely separated).
Poke the bean paste into small balls and sprinkle corn starch on the surface to fix it. (Four eggs probably need 12 red bean paste balls)
Beat four egg whites with an egg beater for 8 minutes (don't pause) and then put them in chopsticks until they don't fall off. (After 4 minutes, open the oil pan to heat the oil temperature)
Add corn starch to the beaten egg white, 2 eggs 1 spoon, with a ratio of 2: 1(4 eggs can also be added with 3 spoonfuls).
Rotate the beaten egg white with a spoon filled with bean paste balls, so that the egg white wraps the bean paste into balls.
Put the egg white balls in the oil pan, take them out after about 30 seconds, and stir them with chopsticks halfway.
Sprinkle some sugar on the fried bean paste.
Matters needing attention
Egg whites should be constantly whipped.
Put a proper amount of corn starch in the egg white.
Can't fry for too long.
