The method of making pomfret is as follows:
Ingredients: 1 pomfret, appropriate amounts of ginger, green onion, bean paste, soy sauce, cooking wine, pepper and salt.
Method
1. Wash the pomfret, make a few slits on the fish body, sprinkle a small amount of salt, pepper and cooking wine to marinate for a while.
2. Slice the ginger and cut the green onion into sections.
3. Wash the marinated pomfret with kitchen paper to remove the water and dry it.
4. Put an appropriate amount of oil in the pot, heat it until 6 or 7 layers are cooked. Add the ginger slices and lightly fry, then add the green onions; then add the pomfret and fry slowly over medium-low heat; fry until one side is slightly browned. Flip and fry the other side; after frying both sides until lightly browned, add appropriate amount of soy sauce, cooking wine, and bean paste, and cook until fragrant.
5. Then add an appropriate amount of water, bring to a boil over high heat, simmer over low heat for about 10 minutes, turn over in the middle; finally reduce the juice over high heat and serve.
