It is a delicacy located in Laoting County, Hebei Province, southeast of Tangshan City, and the birthplace of Laoting Drum.

As a famous food in northern China, Liu Mei roast chicken is sold in Beijing, Tianjin, Tang, Qin and Northeast China (it has been sold to all provinces, municipalities and autonomous regions in China 18).

Founder of Liu Mei Roast Chicken:

Influenced by his parents, Liu Jun learned a whole set of cooking skills. 1897, he moved from a small village in the countryside to Laoting County, settled in Chengguan South Street, and opened a shop called "Liuji Roast Chicken Shop", specializing in roast chicken business.

Liu Tan, a knife-wielding bodyguard, accidentally tasted Liu Ji's roast chicken when he went back to his hometown to visit relatives, and pointed out that its shape was not beautiful. Liu Jun is particularly concerned about this. He put the right wing of the washed and cooked chicken through the knife edge of the chicken neck, and then through the chicken mouth, so that the head and neck of the chicken clung to one side of the chicken back with chicken wings, and the other chicken wing folded naturally, then knocked off two chicken legs with the back of the knife, and then put the claws into the hollowed-out chicken belly together.

After this "modeling", the roast chicken looks compact and full, like a plump naked chicken sleeping sideways. Liu Jun also added precious seasonings to the recipe of cooked food, which made the roast chicken more unique. Liu Jun's innovation integrated the color, aroma, taste and shape of roast chicken, which laid the foundation for future development.

Liu Tan presented the improved Liuji roast chicken to Empress Dowager Cixi and named it "Liu Mei roast chicken". Liu Jun, praised by Empress Dowager Cixi, changed her name to Liu Mei.
