Bread:
200g high-gluten flour, 15g milk powder, 130g ice water, 4.5g fresh yeast, 10g butter, 2 salt Grams
Alkaline water:

Steps
1. Put all the bread ingredients into the cook machine and knead until smooth.
2. Divide 24 pieces equally, about 15 grams each, roll into a round shape, make pointed ends at both ends, do not cover the surface, freeze for 40 minutes.
3. Pour the alkali into the water and stir evenly. Don’t mistake the order. The alkali must be poured into the water. The alkali is corrosive. Wear two layers of gloves when operating.
4. Put the frozen dough into alkaline water, soak it for 30 seconds, take it out on kitchen paper to absorb the excess alkaline water, and cut it in half with kitchen shears.
5. Heat the oven at 200 degrees, lower the heat at 180 degrees, and bake for 12-15 minutes.
