I'm going to Wuhan during the May Day holiday. Those who know Wuhan thank me first.
The character of Wuhan people represents the character of this city. The characteristics of a city are shaped by its cultural background and living environment.

Wuhan is an ancient commercial city with developed transportation and convenient communication. Many years ago, people from the south to the north lived with local aborigines, so it is difficult for real Wuhan natives to become the majority. Wu Hanyou wrote a book about Hankou's past, called "Hankou Zhi Zhu Ci", which said: "There has never been an aborigine here, and nine merchants are alone." .

In Wuhan, we can see an interesting phenomenon: all foreigners who have integrated into Wuhan residents, when they first arrive, often complain about the character of Wuhan people. However, in a short time, these grumblers' own personalities were quickly assimilated by Wuhan people and changed what they thought was different from Wuhan people.

What is the reason? Gai Shi is a deep-rooted and profound street culture in Wuhan. This kind of street culture has a strong digestion, and it is easy to digest foreign things and shape outsiders into the roles they need. People in Wuhan are not as exclusive as people in Shanghai and Guangzhou, but seem to get along better with foreigners than locals, and to a considerable extent, most of them are from other places.

At the same time, Wuhan is a city between the north and the south. This position has caused a lot of embarrassment in Wuhan. For the north, Wuhan is very cold in winter, and the temperature can reach several degrees below zero, but it has never been so cool in summer. Northerners sleep in thin quilts in summer, and Wuhan people can only move their beds to the open air, so as to spend a sultry and almost cruel night. For the south, Wuhan has its humid heat in summer, the temperature is as high as 40 degrees or even higher, but it is not warm in winter. When southerners wear sweaters for the Spring Festival, Wuhan people should make a fire at home to keep warm.

In this way, the convenience of Wuhan has both the shortcomings of the north and the south: high temperature and high humidity in summer and freezing in winter. The terrible thing is that Wuhan lies between the north and the south. The south thinks you are the north, and the north thinks you are the south. When air conditioning was installed in the southern office, Wuhan was regarded as the north; Households in the north install heating, and Wuhan is considered as the south.

The helpless Wuhan people have to be colder than the north when it is cold and hotter than the south when it is hot. Therefore, the character of Wuhan people is also compatible with the north and the south: both the boldness of northerners and the intelligence of southerners; In other words, it can be said that there are both rudeness of northerners and cunning of southerners.

The cold and hot living environment naturally makes people's character ups and downs. Therefore, Wuhan people are prone to violence and irritability, but it is also easy to settle grievances and forget the past. As the saying goes, come and go in a hurry. Foreigners who have come here for a long time can't get rid of the oppression of this climate, so they can't help Wuhan. Foreigners who only visit here can only see the fidgety part of Wuhan people, but they can't see the part where Wuhan people laugh and let bygones be bygones, so it is easy to be biased against Wuhan people.

Therefore, I say that people who spend a short time with Wuhan people will mostly have a derogatory evaluation of Wuhan people; However, people who have been with Wuhan people for a long time will certainly appreciate the cuteness of Wuhan people's character.

Wuhan is a controversial city. When people talk about Wuhan, there are always three words on their lips: "Big", "Chaos" and "Hot".

Speaking of big cities, Wuhan is definitely not the largest city in China. In terms of urban population, it can't compare with Beijing, Shanghai and Tianjin. In terms of area, although it is one of the largest cities in China, except for a huge East Lake, the built-up area is equivalent to Tianjin, but it is not comparable to Beijing and Shanghai. But strangely, in China, there are only two cities with the name "Da" in front of them, one is Shanghai and the other is Wuhan.

The reason why Wuhan is "big" may be because its regional characteristics give people the feeling of "atmosphere", or perhaps because the urban structure of three towns separated by a river has created a magnificent impression. Wuhan is located in Jianghan Plain. In this city, there are rivers, lakes and mountains. The vast Yangtze River runs through the urban area, connecting the three towns of Wuhan in series, and the surging Han River divides Hankou into Hanyang, which may be regarded as one of the big cities with the most lakes in China. There are large lakes such as Hu Sha, South Lake and East Lake in the urban area, and there are countless small lakes around, among which East Lake is the largest lake in China. The whole city has a pattern of Han Dynasty (Hankou Hanyang) on the left and Wuchang on the right, with lakes in the city and lakes around the city as endless as the eye can see.

Among the three towns in Wuhan, Wuchang and Hankou are two big cities if they are put in other places, let alone connected together, and they are simply giants in the city. Nanjing and Wuhan are both big cities along the Yangtze River, but compared with Wuhan, Nanjing is very small. I remember riding a bike to see the Nanjing Yangtze River Bridge. The east of the bridge is a bustling urban scene, but when I look to the west of the bridge, it is a wilderness with a sense of desolation. But you won't get this impression in Wuhan. No matter standing at the bridgehead of Wuhan Yangtze River Bridge or the Second Yangtze River Bridge, there are endless bustling urban scenery at both ends. Passing the Yangtze River Bridge at night, I saw the lights flying like a shuttle, and the two sides were brightly lit. There are many tall buildings in Hankou, and under the bridge is the shining neon lights in the business district of Simenkou. If you get off at Hankou Railway Station, it takes nearly one and a half hours to get on and off at Huazhong University of Science and Technology in Yujiashan, Wuchang. No wonder people who come to Wuhan for the first time have a great first impression of the city.

Speaking of chaos, it seems to be related to Wuhan's character. Like all cities along the Yangtze River, Wu Hanyou has its unique charm. Standing on the Yellow Crane Tower overlooking the three towns of Wuhan, you will be deeply attracted by the beautiful appearance of this city. Nearby, the Yangtze River floats eastward like jade, Hongqiao flies, vehicles shuttle, and Guisheshan faces each other from afar. Hankou on the north bank is full of high-rise buildings and prosperous in business. Wuchang on the south bank is beautiful and quiet, and East Lake looms in the distance. In fact, among big cities, no city is as picturesque as Wuhan. The slogan of Wuhan is "Building a Landscape Garden City". I think compared with some cities that simply lack such resources, this slogan is neither melodramatic nor exaggerated. However, although Wuhan people have the shrewdness of a "nine-headed bird", they also have an unrestrained, bold and impulsive temperament. Therefore, it seems casual. Not as good at hiding others as some cities with bad natural environment. Therefore, Wuhan is not as grand and tidy as Beijing, nor as exquisite and exotic as Shanghai. When you walk into the streets of Wuhan, you will feel "chaotic".

The railway station is the place where people have their first impression of the city. But when you come out of Wuchang Railway Station, what you see is a chaotic scene: people wandering around, messy and crowded buildings, and roads full of vehicles all give people a sense of chaos. Wu Luo Road is one of the main roads in Wuchang, and the cement pavement has been in disrepair for a long time. Sitting on the bus, it was bumpy. Buildings on both sides are chaotic and shops are jumbled. Even if there are rows of tall buildings, it can't hide the disorder of this street. There are many tall buildings on Zhongshan Avenue and Jiefang Avenue in Hankou, which are full of vitality and prosperity, but they are also chaotic and crowded. However, if you think that Wuhan is like this, you are wrong. Wuhan and Wuhan people have the same personality, and there is a great contrast. The dilapidated place is still dilapidated, but it often has some eye-catching urban scenery. You can see some exquisite and beautiful street scenes in Zhongnan Avenue in Wuchang, Donghu Road, Zhongshan Avenue in Hankou (west of Liudu Bridge) and Jianghan Road, which are no less than any modern city in China. Therefore, these places have also become the representatives of Wuhan city image. At night, walking on the streets of Wuhan, many entertainment places and shining neon lights make Wuhan colorful, prosperous and full of vitality.

Drivers in Wuhan are careless and have a weak sense of respect for chapters. Even if there are policemen, they don't care much. Driving is "fierce" and "awkward" "Fierce" means that they have no patience and like to drive fast. As long as the road conditions permit, they will drive scary. "Diao" means that they are good at "exploiting loopholes" in congested lanes. As long as there is a gap, they will try to make up the car at once. So in the streets of Wuhan, you can often see cars chasing each other. Even if the bus meets the passengers waving on the road, as long as there is no police, they dare to stop casually. There are many bus flights in Wuhan, and the station is often crowded with all kinds of vehicles. In order to compete for passengers, the conductor of each car shouted "the company gate!" " "Lu Wu Road!" "Wuhan Pass!" . Because there are not many overpasses and tunnels for pedestrians to cross the street in Wuhan (but it is still better than Tianjin), it is also common for pedestrians to jaywalk.

The chaos in Wuhan is also related to all kinds of desperate people in this city. As the thoroughfare of nine provinces, Wuhan is a big dock, and the environment where people of all colors gather has created the Jianghu spirit of Wuhan people. More importantly, although geographically located in the middle of China, it is far from the political center and is rarely bound by solemn and elegant temples. Therefore, Wuhan people maintain a spirit of Chu people while maintaining a spirit of Chu people. "Barbarism" makes them still free, impulsive, unrestrained, loud and powerful, bold and free-spirited, and hot-tempered. This character makes Wuhan always a city that is easy to "fire". From Wuchang Shouyi to the February 27th strike, from the Great Revolution in the 1920s to the "Million Heroes" in the 1960s, Wuhan people have vividly demonstrated their hot and impulsive personality. When foreigners come to Wuhan, they are always moved by the rough voice of Wuhan people, which makes people feel that Wuhan people are not easy to deal with. Even foreigners who have always been respected in China have learned the skills of Wuhan people. In that year's oral English class, a foreign teacher once talked about his experience in Hankou. He is still depressed. He walked carelessly on Zhongshan Avenue and stepped on a young man's foot. He repeatedly told him he was sorry, but the young man looked at him coldly for a long time and refused to buy it. On the contrary, he stepped on one foot and left angrily. The high crime rate in Wuhan is probably related to this adventurous and extreme character.

Speaking of the heat in Wuhan, everyone knows. Wuhan is one of the three famous "stove" cities in China. It warms up in February and March, entering colorful spring, turning hot in May, and getting hot in July, August and September. During this period, Wuhan always seems to be soaked in hot water. It's too hot to breathe. Since entering1February, Wuhan has turned cold again. Unlike the north, there is no heating in winter, and people have no habit of keeping warm. Although the temperature is not as low as that in northern cities, it is still relatively cold because of relative humidity. Frostbite often occurs in this climate. It is difficult for many foreigners to adapt to this fluctuating climate. But Wuhan people still live a leisurely life. The ups and downs of Wuhan people's temper may also be related to this climate.

Wuhan is a city with four distinct seasons, and its citizens' personality is as colorful as its climate. In spring, Wuhan people especially like outing. On the edge of East Lake and Luojia Mountain, people can see flowers and picnics everywhere. In other places, scenic spots like East Lake have long been enclosed and turned into places where parks charge fees, but Wuhan has opened most areas of East Lake to the public free of charge, which is considered martial arts.

However, it is summer that best reflects Wuhan's urban character. In Wuhan in midsummer, the heat wave is rolling. In this climate, a foreigner is afraid to go out easily. However, in summer, Wuhan people have the opportunity to swim in the Yangtze River and East Lake. Therefore, there is always a heat wave rolling by the water in Wuhan, and all kinds of swimmers show their charm here. Showed the lofty sentiments of the Wuhan people. When the sun goes down, almost all Wuhan people will go out, either find a place to rest and chat, or move a bamboo bed outside, or invite friends to find a stall to enjoy midnight snack. Therefore, it is the heat of the sun during the day and the heat of the crowd at night. The whole summer night in Wuhan is the voice of people. In this summer night's life, the other side of Wuhan people's fiery personality is also fully displayed. They are alert, smart, well-informed and clear-headed. And many romantic and not so romantic love stories also happened at this time.

Wuhan is a fiery city, full of passion and vitality of a civilian city. It is magnanimous and unpretentious, it is lazy and interesting, it is not exclusive, and you hardly feel like a foreigner here; It has its own personality. You can hear sharp and straightforward words here, but you seldom hear disgusting words. It is well-informed, often indulges in self-meditation, and rarely boasts of stupid vanity.

Wuhan food culture

Traditional snack

"There is no need to pay attention to the food list. People eat well in winter and moon, rice wine dumplings stay up late at night, and fish-flavored stems are fragrant. This dish originated in Huangzhou, Hubei Province, and was related to the exile of Su Dongpo, a writer in the Northern Song Dynasty. 1080, Su Shi was demoted to Huangzhou, where he devoted himself to Dongpo and named himself Dongpo layman. At that time, Huangzhou meat was cheap, but it was not cooked well and the taste was not fresh. Su Dongpo explored a set of methods for stewing pork belly through experiments. Stewed meat is bright red, mellow and delicious. Later people called it Dongpo meat, which has been circulating in Huangzhou area for more than 900 years. Later, it was introduced to Wuhan, where cooking techniques were improved and the taste was more delicious.

Coincidentally, Sichuan and Zhejiang, where Su Shi lived, also have Dongpo meat with different flavors. More interestingly, when ethnic minorities in Dali, Yunnan get married, there is a custom that the bride and groom share Dongpo meat.

Huangpi Sanhe

Huangpi Sanhe is a traditional folk dish in Huangpi, a suburb of Wuhan, which has been circulating for hundreds of years. Sanhe is the general name of fish balls, meatballs and patties. Locals also call it Sanxian. They regard three delicacies as the minimum standard for tasting banquets, and there is a saying that "three delicacies are inseparable from their ancestors."

Each of the three cuisines has its own traditional skills. Fish balls are made by chopping gill fish with egg white, onion, ginger juice and lard. Meatballs are made by chopping pork leg, adding minced fish and various seasonings, and crisp frying. Meat patties are made of the same raw materials as meatballs, but they are made into cakes and steamed. When three dishes are cooked together, fish tastes like meat, and meat smells like fish, which has a unique flavor. Because there are three words of fish, pill and cake in the three dishes, fish and jade are homophonic, dragon is round, and cake is homophonic, so people give the three combinations the meaning of annual surplus, family reunion and step by step promotion, which is essential for auspicious celebration and New Year's Day. 194 1 year, Huangpi people opened Huangpi Hutchison Restaurant in Datong Street, Hankou, and introduced Huangpi Sanhe to Wuhan, further improving the quality of local dishes. The fish balls are smooth and tender, the meatballs are fluffy and the patties are soft, which is very popular. Later, with the construction of WISCO, Hutchison Restaurant moved to Jianshe No.7 Road in Qingshan, renamed Jiefang Restaurant, and continued to refine this dish.

Mianyang sanqi

Mianyang is a big county in Jianghan Plain, including today's honghu city in history, and changed to Xiantao in recent years. This area is rich in water and natural products, and it is a land of plenty. People love to eat steamed vegetables, and there is a custom of "no steaming without vegetables", so it is called the hometown of steamed vegetables. Three steaming refers to three kinds of steamed vegetables, some refer to steamed fish, steamed meat and steamed chicken, some refer to steamed fish, steamed meat and steamed meatballs, and some refer to steamed pork powder, steamed pearl meatballs and steamed white meatballs. The so-called steamed pearl balls mean chopping fish and meat, feeding them, squeezing them into balls, rolling glutinous rice in an enlarged sieve, and then steaming them in a cage. The cooked glutinous rice is crystal clear, just like pearls. If glutinous rice is not boiled or steamed, it is called steamed white pills. 193 1 opened a mianyang hotel in Minsheng road, Hankou, which is famous for its good cooking and steaming. In 1950s, with the construction of WISCO, it moved to No.60, Qingshan Workers Village.

Mianyang Sanzheng has a history of at least 600 years. According to legend, Chen Youliang, the leader of the peasant uprising at the end of Yuan Dynasty, captured Mianyang County in one fell swoop. Chen's wife, Pan Shi (referring to Roche), cooked in person, mixed fish, meat, lotus root and rice flour with other condiments, and steamed them in a bowl to reward the peasants for their uprising. Everyone praised it. From generation to generation, eating steamed vegetables has become a habit.

Pan long Juan qie

Pan Long juanqie, also known as Pan Long cuisine, is one of the famous dishes in Chu township operated by Hankou Canal Hotel and Laohuibin Hotel. It originated in Zhongxiang County, Hubei Province, and has a history of 100 years. There are many local legends, all related to Emperor Jiajing of the Ming Dynasty. 152 1 year, the emperor died of illness, and he had neither children nor brothers, so Zhu Hougan, the son of Xing, succeeded him and was sealed in Chengtianfu (Zhongxiang). Legend has it that Zhu Hougui was afraid that other uncles and brothers who were locked up in other places would go to Beijing to seize the position in advance, and pretended to be prisoners released from Beijing and went to Beijing day and night. When he is hungry, there is a ring-shaped food hanging around his neck: egg skin, fish stuffing, steamed and shaped, which is convenient to eat and delicious. When Zhu Hougui said goodbye to his teacher before going to Beijing, the teacher and the chef discussed how to cook an ingenious dish for the emperor who was about to ascend to the throne. Then he took eggs as skin and fish as stuffing, rolled them into long strips, steamed them, cut them into thin slices, and put them on a plate to make a dragon shape, which is called "eating meat instead of eating meat" He also said that Zhu Hougan visited his teacher when he returned to Zhong Xiang to build his father's tomb after he succeeded to the throne, and the teacher designed this dish for him. Later spread, enduring. Restaurants and restaurants in Wuhan have been improved on the basis of folk law, making them famous dishes in Hubei with good color, fragrance, taste and shape.

Lao hui bin kui Hua tofu

"Old Huibin" is the abbreviation of Old Huibin Restaurant, which opened on 1929. It is famous for cooking hubei cuisine, and it can combine the advantages of Beijing cuisine and Jiangsu cuisine. Located in Sanmin Road, Hankou, Liuduqiao downtown area. Sunflower bean curd is an original famous dish in this restaurant, which was jointly created by senior chef Zong Liangzhi and senior chef Zong Liangsong. In the 1940s, they learned from Master Hu and made a unique tofu. The production method is to peel and grind fresh tofu, mix it with minced fish, shrimp, ham and other ingredients, and cook it carefully. It's called tofu. It's really a fine dish. After the market hit three towns in Wuhan, many gourmets went to this restaurant to order this dish. Chefs strive for perfection, design and improve the shape of first-class tofu. The first-class tofu is decorated with shredded chicken egg skin and surrounded by green leaves, which makes it look like sunflower and renamed sunflower tofu. This famous dish has aroused great interest of an overseas Chinese couple who love their motherland. After tasting it, they improvised a poem and said, "Sunflower, tofu, milk and cabbage make people miss old customers. Chu Township looks so rich in flavor and tastes more at home."
