In the spring of 1959, it was successfully created, and it was made into "pine needle-shaped, green and straight" tea, which was officially named Yuhua Tea to show that revolutionary martyrs were loyal and unyielding and would last forever.
Today, Yuhua Tea has become the representative of green tea in China. Its unique geographical location, high picking standard and complicated production technology have all become the characteristics of yuhua tea, which also makes yuhua tea rare.
Yuhua tea, as its name implies, is tight, thin, round and straight. Every step of the tea-making masters shows the skill and sincerity of making tea.
The first step: enzyme immobilization
The standard for picking yuhua tea is to pick one bud and one leaf at an angle of no more than 45 degrees. After picking, put it in the shade and spread it to cool and wither. This is to release the moisture in the fresh leaves, making the leaves softer and easier to shape and dry in the next step.
Fresh leaves spread out, about two centimeters thick. After three to four hours, you can welcome the first process of making yuhua tea-fixing.
If the water is removed by hand, the fire temperature should be controlled at about 120 degrees. If the fire is too hot, it will paste and the tea will taste bad. Even if the temperature is low, it will turn red. Be sure to master the temperature.
Step 2: Knead the dough.
After blanching, some water should be evaporated. Rub it gently after spreading it to cool. Rub it gently when you come up. Rub it hard in the middle. When it is thin, it will be rolled into strips, which will be lighter.
Then rub it round and thin in the pot, and then plastic is to cut it into strips. When cooking, heat it slightly, add some aroma and cook it quickly.
Step 3: forming and drying.
Plastic drying is mainly to continue to emit water, so that tea can reach the moisture content conducive to preservation. Generally speaking, the water content of green tea is not higher than 7%, which is beneficial to preservation. There is also the physical and chemical changes of fresh leaves, which form the unique color, fragrance, taste and shape of our Nanjing Yuhua tea!
The prepared dry tea is carefully and manually screened to remove impurities, debris and the like. And packaged into yuhua tea. The first yuhua tea was brewed with 80-degree hot water, forming a clear and bright soup color, emitting a unique delicate and elegant aroma.
If you taste it carefully, you will find that Yuhua tea not only smells like tea, but also exudes a mysterious charm, and the secret is not tea, but flowers. Sun Yat-sen Mausoleum Tea Garden has created two unique planting methods: forest-tea intercropping and plum-tea intercropping.
It is precisely because of the unique geographical environment, high picking standards and complicated production technology that the tea farm of Sun Yat-sen Mausoleum covers an area of more than 900 mu, but the annual output of Yuhua tea is only five or six thousand kilograms of crude tea, which is exactly what I said.
In fact, what is more rare and precious than tea is the persistence and inheritance of traditional handicrafts by tea makers.
