(1) Knead the dough to the swelling stage according to the general bread making method. According to the general bread making method, the bread ingredients are kneaded into dough until the film can be pulled out. After basic fermentation 1 hour at about 28℃ (fermentation is 2.5 times larger), the fermented dough is squeezed out by hand, kneaded into a circle, and fermented in the middle for 15 minutes.
(2) The dough fermented in the middle is rolled into square slices with a rolling pin, and the size is as consistent as the baking tray as possible.
(3) Put the rolled dough into a baking pan covered with oil paper.
(4) If the dough has extra parts, cut off the extra parts with a knife to make them completely fit the baking tray.
(5) After the dough is laid, the final fermentation is carried out. The suitable temperature for final fermentation is 38℃ and the humidity is 85%. For home baking, put the baking tray in the oven, put a plate of hot water in the oven, and then close the oven door. Usually ferment for 40 minutes to 1 hour until the dough becomes twice as big.
(6) After the fermentation, take out the baking tray from the oven, preheat the oven to 180℃ (the water in the oven should also be removed), brush the whole egg liquid on the fermented dough, sprinkle white sesame seeds, put it in the preheated oven, and bake for about 12 minutes until the bread surface is golden yellow.
(7) Put the baked bread on another clean oiled paper. Take out the baking tray and tear off the oily paper at the bottom. Wait for the bread to cool.
(8) When the bread is cooled to a temperature similar to that of the palm of your hand, you can proceed to the next step. Cut off the four sides of the bread to make it a regular square (if the bread itself is neat, it is ok not to cut it).
(9) Spread salad sauce on the bottom of the bread (the side where the egg liquid is not brushed and sesame seeds are sprinkled) and sprinkle with meat floss.
(10) When you are ready to roll it up, make several cuts with a knife, but don't cut it. It will be much easier to roll up in the future.

(12) Wrap the rolled bread in oil paper and let it stand for half an hour to set the bread roll. After the paper roll is formed, take out the oily paper and cut the paper roll into three sections. Spread salad sauce on both ends of each section and cover with meat floss.
