To make cooked oil: the vegetable oil is heated and boiled, and then naturally cooled. (The vegetable oils commonly used in northwest China are mostly rapeseed oil and linseed oil. I used peanut oil, and the final cooked oil should be no less than 190g. )
Pepper water dough: Add 1 egg and 90g cooked oil to 500g flour, stir with chopsticks and knead with both hands into finer and more uniform powder, then add about140g pepper water several times to knead into a uniform dough.
After the dough in step 1 is fermented, it is slightly kneaded and exhausted, and then it is combined with the chili water dough in step 4 and fully kneaded. Please knead it as much as possible. It will take about 40 minutes to an hour until the dough is smooth and even. ) Cover with plastic wrap and let stand.
Sugar dough: Mix the remaining 500g flour with sugar, add 2 eggs and100g cooked oil, stir with chopsticks into fine and even particles (without rubbing with both hands), and add a small amount of pepper water several times until a dough is formed (because there is too much sugar, putting too much pepper water will make your hands sticky, and it will not form a dough, so it is not easy to form in the later stage, remember).
Divide the dough in step 5 in two and knead it into a round dough sheet with a thickness of 6-8 mm; Then sprinkle dry powder on the chopping board and roll the sugar dough in step 6 into a disc with the same size; Three layers of slices are stacked, and the reunion slice of sugar noodles is in the middle layer, and the edges are aligned as much as possible; Gently press to drive away bubbles and make the three layers fit as well as possible.
Scribing: First, the wafer is divided into strips with a width of about 4 cm, and then the strips are cut into blocks with a length of 6-7 cm.
Shaping: Take a small piece, cut it 5-7 times along the dotted line, and pay attention to leave 1 cm on the left side, and then shape it into a flower shape, or roll or knead it at will. After the whole modeling, cover with plastic wrap and let it stand for a while to wake up. Keep warm when the temperature is low.
Pour vegetable oil into the pot, heat it to 50%, and then fry the dough embryo on low heat, paying attention to the opposite side. Until the surface layer is golden and the color of the middle sugar surface layer becomes darker, tap the surface of the dough embryo with chopsticks, and the sound and feel are crisp, so that the oil control can be removed. The taste is crisp and sweet after cooling.
