Characteristics of Kouzijiao Liquor
In addition to the weather and geographical location, the combination of people is the unique brewing technology of Kouzijiao people, which is also the key reason for the beauty of wine. Among them, the quality of koji directly determines the quality of wine brewing. In the Qufang of the old factory building of Kouzijiao, there are two kinds of unique songs of Kouzijiao, namely, chrysanthemum red heart song and ultra-high temperature song, which are the soul of achieving the unique fragrance style of Kouzijiao.
The color of the chrysanthemum red heart song is slightly khaki, which is named after a little chrysanthemum red heart in the middle. Inheriting the Millennium brewing technology of Suixi, it is made of multiple grains by using ancient methods such as peeling, stacking and squeezing tide. Ultra-high temperature songs, commonly known as fragrant songs, are produced at a high temperature of 65 to 67 degrees in dog days every year. Breaking the record of the highest temperature called boiling point in traditional koji-making is an innovative move of kouzi wine.
