1. Material selection: Correct, round, medium-sized, fully mature tomatoes free of diseases and insect pests.
2. Clean and score: Wash the tomatoes, remove the stems, use a blade to make four slits in the middle of the fruit, and then flatten them.
3. Hardening treatment: Soak the seamed tomatoes in 15% lime water clarification solution for 12 hours, then pick them up, soak them in clean water for 12 hours, rinse them with clean water several times, and remove them. Lime flavor, remove and drain to harden.
4. Sugar dip: The amount of sugar solution is usually 100 kilograms of tomatoes, using 40 kilograms of sugar and 90 kilograms of water. First, boil the sugar liquid for 3 to 5 minutes and immerse the tomatoes in it while it is still hot. After soaking, concentrate the sugar once a day for a continuous number of times until the concentration of the sugar liquid reaches a certain concentration value. Take the tomatoes out and put them into boiling water to wash away the sugar mucilage on the fruit surface.
5. Drying: Shape the washed tomatoes into shapes and bake them at a certain temperature for several hours to obtain the finished tomato candy.
