Step 2: Put the rye cereal bread flour and water into the bread machine barrel and start the bread machine's dough mixing function.
Step 3: After about 18 minutes, the dough has been kneaded into a tough dough, which is smooth and not sticky. Cover with a damp cloth for basic fermentation.
Step 4: The room temperature is 28 degrees, and the basic fermentation is 40 minutes. Remove the wet cloth. The dough has fermented to two and a half times in size. Dip your fingers in flour and poke holes without shrinking or rebounding.
Step 5: Take out the fermented dough, place it on the dough mat, flatten it with your palms to remove the air from the dough, you can fold it.
Step 6: Sift the flour into the rattan basket, making a thin layer, and pour out the excess flour.
Step 7: Shape the dough into the shape you like. I directly shape it into a large circle.
Step 8: Put the dough into the rattan basket, paying attention to the smooth side facing down.
Step 9: Cover the dough with a damp cloth and let it ferment for 40 minutes. After fermentation for 20 minutes, preheat the oven to 220 degrees. In order to bake the European buns with a crispy outside and tender inside, a flat-bottomed cast iron pot can be placed at the bottom of the oven to create steam and maintain temperature. It is better to use a stone slab if there is a baking stone.
Step 10: Line a baking pan with oilcloth or oil paper, and invert the fermented dough into the baking pan. Use a bag cutting knife to cut out the pattern you like.
Step 11: Place the baking sheet in the middle and lower rack of the oven, that is, on the cast iron pan, and start baking. I would like to remind everyone that the oven I use can generate steam, so I do not heat water in the cast iron pot. If it is an ordinary oven, when the bread is put into the oven, pour half a cup of hot water into the cast iron pot, and then put it in the baking pan. Start baking.
Step 12: After placing the baking pan, press and hold the water drop button of the oven to steam for about 50 seconds. After baking for five or six minutes, steam for about 30 seconds and bake for about 25 minutes. , open the oven and take out the bread.
