High gluten flour? 400 grams
Milk? 250 grams
Fine sugar? 40 grams
High-sugar tolerant yeast 5g

Steps:
1. One shot:
Mix all the ingredients together, knead into dough, cover with plastic wrap and ferment (room temperature fermentation 1 hour or oven at 38 degrees for half an hour).
Tips:
Yeast is best mixed in milk and then poured into flour to avoid direct contact with salt and sugar.
The amount of sugar can be increased or decreased according to preference, and can be reduced to about 20g (not very sweet).
2. The second round:
After fermentation, it becomes bigger, then take out the exhaust, divide it into 25 uniform small dough, knead it evenly and put it in a baking tray. Ferment in the oven at 38 degrees 1 hour (put a bowl of water to keep the humidity), ferment to twice the size and stick together.
3. Decoration:
After taking out, the surface can be decorated with dry powder: frosted sand or milk powder (screened with a sieve), coconut or sesame (sprayed with a little water). Don't spill it.
4. Baking:
Oven 170 degrees for 20 minutes, observe that the surface color is too dark to cover the tin foil. Take it out and let it cool, and the super soft steamed buns will be ready!
