working methods

1. Add a proper amount of boiling water to the corn flour in batches, and stir it with chopsticks while pouring water, so that the granularity of the corn flour scalded by boiling water is obviously reduced, ensuring the softness of the finished product;

2. After the corn flour is cooled, add yeast powder and eggs, and fully grasp them by hand to make dough with moderate hardness. Cover and let it ferment at room temperature for one night. Good dough is not as smooth and tangible as white flour, so don't care too much;

3. The dough is ready the next morning, which is about 1.5 times the previous size. By the way, will fermentation turn sour overnight? I usually mix the dough with baking powder before going to bed, ferment it at room temperature for one night, and get up the next morning to let out the air and fry it directly, without baking soda or alkaline noodles, so the dough is not sour. If it is fermented with flour starter, you need to add some baking soda to neutralize it before getting up in the morning, otherwise it will be sour;

4, the pot on the medium fire, pour the right amount of cooking oil into the pot and brush the bottom of the pot, try to use a pan, so that you can stick it better. Dip a little cooking oil in your hand to prevent it from sticking to your hands. Divide the corn dough into five small portions, shape it into your favorite shape, and fry the ground color directly in the pot, which can be round, long and flat, but not too big or too thick to prevent it from being immature.

5. When all the cakes are put into the pot, the bottom has been fried into golden brown, and the surface of the cakes is sprinkled with black sesame seeds;

6. Pour a large glass of water, about 400 ml, less than half the height of the cake, cover it and turn to a big fire;

7. The fire lasted about 5 minutes. When the water in the pot is about to boil dry, pay attention to the sizzling sound in the pot. At this time, the water in the pot is almost used up. Reduce the heat and simmer for 3 minutes. When all the water is collected, turn off the fire and take out the pot.
