Yuntaishan Yunwu Tea ranks among the famous teas such as Biluochun in Taihu Lake and Yuhua in Nanjing with its excellent color, fragrance, taste and shape. In ancient times, the monks of Wuzheng Temple carefully collected and made them every year, and only got two or three kilograms. They kept it a secret from others and regarded it as a precious tea for entertaining VIPs. Known as "mellow taste, beautiful color, fragrance and clear liquid". Tang Zhongmian, the magistrate of Haizhou in the Qing Dynasty, also regarded it as the "Dragon Tuanfeng Cake" of the Tea King.
According to "Song Shi Huo Zhi"; "Haizhou is the place to buy tea." Tea monopoly is a measure of taxation, control and exclusive acquisition of tea by successive governments. In the second year of Song Jingde (1005), the imperial court issued a taxation edict to tea merchants selling Haizhou tea. Because "Haizhou tea is good and easy to sell, and the money invested is thicker than other States." According to the Records of the Golden History, four years (Zhang Zong Cheng 'an Year, AD 1 199) in March, new tea was made in Zi, Mi, Ning, Hai and Maozhou. According to the example of the south, each catty is a bag, which is worth 600 articles. 192 1 year, the Yunwu tea produced by Yi Shu Company won the Nanyang Association Quality Excellence Award. At present, there are 300 mu of tea fields planted in Sucheng, the origin of Yunwu tea, with an annual output of 200 tons. Yuntai Mountain is close to the Yellow Sea, with a warm and humid climate. Often in the end, the clouds break up and the sea fog rises again. "Wuyun has good tea." Green tea trees are often shrouded in Wuyun Mountain. Low temperature, small temperature difference, high humidity and tender buds and leaves. When baking, we should control the temperature of the pot, and grasp, bake, rub and turn it all by hand. The tea is uniform in size, rope-shaped, shaped like a thin eyebrow, harmless to bees, green in color, pure and lovely.
Wu Yun, Yuhua and Biluochun are three famous teas in Jiangsu. As can be seen from the above table, the amino nitrogen content of Wuyun tea is less than that of Biluojuan and Yuhua tea, while the content of catechin and caffeine is the highest, which is an important factor to form a fresh taste.
Wu Yun Tea's tea tasting method is also very unique. When making tea, it is best to pour half a cup of boiling water first, and control the temperature between 80℃ and 90℃. Without the lid, the tea leaves stretch like scissors, like new leaves. After a while, add water twice, and in the clear yellow-green tea soup, there seem to be clusters of camellia, and the yin is moving. The taste is mellow, fragrant and refreshing. Every time you refill the water, don't wait until the water is dry, but refill the water when there is a quarter of water left in the cup, so that it will be very mellow even after repeated brewing.
1980, Lianyungang Wu Yun, Nanjing Yuhua Tea, Suzhou Biluochun and Wuxi Er Quan Yin Hao were listed as the four famous teas in Jiangsu. According to laboratory tests, the content of theophylline, tea tannin and vitamins in Wuyun tea is high, and it has the functions of excitement, heart strengthening, clearing away fire, convergence, diuresis, anti-inflammatory and sterilization. Moderate drinking can restore mental fatigue, improve memory, refresh people, and help treat abdominal distension and indigestion. Raw tea can be preserved for more than ten years by rubbing and drying in the sun, and the longer the age, the better the curative effect. In recent years, Wuyun Tea in Lianyungang reappeared in the Canton Fair, which was warmly welcomed and appreciated by Japan, Singapore and some European and American countries.
