1. Mix flour, sugar, dry yeast and salt, add water, knead into dough, and knead vigorously until the dough is smooth and elastic. Add softened butter and continue to knead the dough until the dough is gently spread by hand, and the dough can form a transparent film (expansion stage).

2. Put the kneaded dough into a bowl, cover it with plastic wrap or wet cloth, and ferment at room temperature for 30 minutes.

3. After fermentation, the dough becomes bigger.

4. Squeeze the fermented dough out of the air, knead it again, divide it into 16 parts, and let it stand for 10 minute.

5. Take a small dough, put your hands on the table and knead it into a slender strip.

6. Pick up both ends of the strip and tighten it as shown in the figure. Twist it twice on the top and make a circle on the bottom.

7. Stick the two ends down at the bottom of the circle.

8. Put the molded dough on the baking tray (the dough is soft, so be careful when handling it). Shape all the dough in this way. Mix 1 egg yolk and 1 tablespoon water to form egg yolk water, and brush it on the dough surface with a brush dipped in egg yolk water.

9. Carefully sprinkle coarse sugar on the dough surface, or pick up the dough and press it directly into the sugar to make the surface covered with sugar.

10. Put the baking tray in an oven preheated to 175℃ and bake for 20-25 minutes until the surface is brown. It can be eaten after cooling.

Tips for making small burritos:

1, medium gluten flour is the most commonly used flour for making steamed buns and other pasta at home. If there is no medium gluten flour, half high gluten flour and half low gluten flour can be mixed instead of medium gluten flour.

2. After all the small rolls of dough are formed, put them in the oven and bake them immediately. Don't delay for too long, lest the dough ferment excessively.

3. If the baking temperature is appropriate, the cooled burrito should have a very crisp taste. If the inside of the baked burrito is soft, it means there is not enough heat. Bake in the oven again for a while until it becomes hard.
