High gluten flour? 300 grams

2g sugar is used to promote fermentation.
Water can be replaced by milk and heated to about 35 degrees before use.
Yeast can be a common yeast with high activity.
Steps:
1. Mixed dough
Add yeast to warm water (hand temperature) and stir well. Add salt, sugar and eggs to the flour and mix well. Add yeast water to the flour and mix well. Stir vigorously with chopsticks for a while until the dough is uniform.
ferment
Put it in the oven for fermentation at 40℃ 1 hour (be careful to put a bowl of water to keep the humidity), and ferment until it is about twice as big. Dip your finger in flour and poke the hole, and don't retract.
You can also ferment at room temperature in a warm place, and the time is about doubled.
Plastic operation
Put it on the kneading mat and press it to exhaust (if it is too sticky, you can sprinkle some dry powder appropriately). After the surface is slightly smooth, it is divided into three equal parts. (If there is enough time, cover it with plastic wrap and relax 10 minute). Take a piece, press it for air, roll it out with a rolling pin, pay attention to the air permeability at the corners, roll it into the shape of a cow tongue (if it is too sticky in the process, sprinkle some dry powder appropriately), fold both sides in half to the middle, roll it up from one end, pinch it tightly and seal it, and all three are involved in the mold.
ferment
Secondary fermentation to nine points full. Methods: Fermentation was carried out in an oven at 40℃ 1 hour/room temperature.
baking
After the oven is preheated, the middle and lower floors 170 degrees for 30 minutes. After 20 minutes, surface coloration can be observed. When you are satisfied, you can take it out of the oven, and the toast can be quickly reversed and cooled.
The temperature of the oven is adjusted according to my own situation. My toast box is low in sugar, with an average extension of about 10 minute.
