Osmanthus rice cake
Ingredients list: 2g yeast, 100g rice flour, appropriate amount of raisins, 50g all-purpose flour, appropriate amount of dried osmanthus, 105g milk.
Mix rice flour, all-purpose flour and yeast evenly, pour in milk and stir until flocculent, then knead into a smooth dough. Cover with plastic wrap and ferment in a warm place until doubled in size. Knead and deflate the fermented dough. .
Take an appropriate amount of dough, shape it, garnish with raisins and osmanthus (about 24g each), put it into a steamer lined with a drawer cloth and keep some distance from each other. Pour warm water of about 50 degrees into the steamer and cover it. Ferment for 2 times for 30 minutes, steam over high heat for 15 minutes and simmer for 5 minutes.
