Beat the yolk until it is white and swollen.

Boil the sugar with water until it boils, then slowly pour it into the egg yolk liquid, beating it while pouring it, and continue beating it after pouring it. At this time, the egg yolk will bubble and expand, and finally become thick and soft foam, and there will be a slight rustling when it is gently stirred.

Mascapone is softened in water, stirred evenly and added into egg yolk syrup.

Gelatin tablets are soaked, drained and heated in water until they melt.

Mix a small part of mascarpone egg yolk paste and gelatin thoroughly, and then pour it all into mascarpone egg yolk paste. Stir well.

After you finish the cake, you can start to be a finger lady. Add sugar to the egg whites and stir for three times. (The technique is the same as that of Qi Shi Feng)

Beat the egg yolk evenly, add the egg white paste and mix well with a spatula.

Sift in the flour, then continue to stir until the batter is evenly wet.

Preheat the oven to 190 degrees, bake for 10 minutes, and paint the surface.

Add a tablespoon of matcha powder and a small glass of water to boil, then pour in rum and mix well.

Lady finger is soaked in matcha wine, then the bottom of the cake mold is filled, half of mascarpone is poured, and the rest of mascarpone is poured into the white layer of Lady finger soaked in matcha wine.

Put it in the refrigerator, demould it overnight, sprinkle with matcha powder, and cut it delicious.
