270g high-gluten flour, 30g low-gluten flour, 5g dry yeast, 40g fine sugar, 5g salt, 15g milk powder, 80g chocolate whipping cream, 100ml milk, 35ml whole egg liquid, 10g matcha powder, honey red beans Just the right amount.

① Prepare all ingredients and weigh them separately for later use.

② Mix all the ingredients except matcha powder and honey red beans in the order of liquid at the bottom, powder in the middle, and dry yeast at the top.

③Knead the dough to the complete stage, that is, you can stretch out a large piece of flexible film and the edges are neatly poked (knead with a chef machine for 20 minutes), then take half of the dough and add 10 grams of matcha powder and knead evenly. .

④ Place the kneaded dough in a warm and humid place (cover with a damp cloth) and ferment until it doubles its original volume.

Tips:
